Saute the Vegetables
1. Heat a tablespoon of oil or butter in a large skillet ( pan ) over medium heat.
2. Add diced onions, sliced capsicum (bell peppers), broccoli , olives and chopped green chillies to the skillet .
3. Saute the vegetables for about 5-7 minutes or until they are softened and slightly crunchy
.
4. If you like your vegetables to be crunchy, reduce the cooking time accordingly.
Cook the Pasta
1. Boil water in a large pot and add a pinch of salt & half tea spoon oil .
2. Add the pasta and let it boil for 10 minutes at mid flame.
3. Once cooked, drain the pasta and set aside.
Prepare the White Sauce
1. In a separate saucepan, melt the butter over medium heat.
2. If using minced garlic, sauté it in the butter until fragrant.
3. Add 1 teaspoon the all-purpose flour to the melted butter and whisk continuously
for about 2 minutes to make a roux. This helps to thicken the sauce.
4. Gradually pour in the milk ( at room temperature ) while whisking constantly to avoid
lumps. ( use whisker )
5. Continue cooking and stirring until the sauce thickens and coats the back of a spoon,
about 5-7 minutes.
6. Stir in the grated Parmesan cheese until melted and well combined.
7. Season with salt , oregano , red chilli flakes and pepper to taste.
8. Cook for 2 minutes and add all the sorted vegetables
Combine the Pasta and Sauce:
1. Add the cooked pasta to the white sauce and toss until the pasta is evenly coated with the sauce.
2. If using any additional ingredients like cooked chicken add them now and mix well.
3. Cook for another minute or two until everything is heated through.
Serve the hot White Sause Pasta
1. Garnish with chopped herbs like parsley or basil.
2. You can also sprinkle some extra Parmesan cheese on top if desired.
3. Serve hot and enjoy your creamy white sauce pasta!
